I have felt like such a little domesticated honey bee as of late. I come home from working 8 hours and whip up a meal, usually a few courses with dessert. Who is amazing? Yeah...thats right this girl.
I have been on a Strawberry kick...and I mean..eating them with everything...salads, shortcakes, by themselves, smoothies, etc..you name the concoction..I have probably eaten it in the last few months. I don't see this slowing down anytime soon, so should probably just buck up and deal with it. Mmm Strawberries! Here are a few of the things I have made as of late...
Fish tacos with avocado sauce
The recipe is off of Taste of Home, my mum got me their magazine subscription a few years ago, and I have fallen in LOVE! Mine were not quite as pretty as their picture...but I think I did a pretty good job.
With Multi-grain Tortillas
And homemade salsa with Jalapenos, Avocado, tomato, lime, cucumber, and cilantro. MMM
The recipe in case you care...
Directions
- In a large resealable plastic bag, combine the lemon juice, oil and garlic. Add the halibut; seal bag and turn to coat. Refrigerate for 30 minutes.
- For sauce and salsa, peel and cube avocados. In a small bowl, mash 1/4 cup avocado. Stir in the remaining sauce ingredients. Place remaining avocado in a small bowl; stir in the remaining salsa ingredients. Refrigerate sauce and salsa until serving.
- Drain fish and discard marinade. Broil halibut 4-6 in. from the heat for 8-10 minutes or until fish flakes easily with a fork. Place fish on the center of each tortilla. Top each with 1/4 cup cabbage, about 1 tablespoon sauce and 1/4 cup salsa. Yield: 4 servings.
Editor's Note: Wear disposable gloves when cutting hot peppers; the oils can burn skin. Avoid touching your face.
They were delish! I just used Tilapia fillets, the breaded ones because when I sent someone to Costco, they came back with those..Ehh they will work!!

Again...don't judge the presentation ladies and gentleman...It really is delicious!
Tomatoes, Basil, Fresh Mozzarella (let me tell you how hard this FRESH stuff is to come by in the Independence, Monmouth Area..I tell you what! Then drizzle the mozz with Olive Oil, and top with Salt and Pepas..hEre..SALT SALT SALT SALT and PePas HERE!...Anybody? No? Okay..moving on.
And last but most certainly not least
Salad!
These salads are Jam packed with organic veggies, most from the local farmers markets that I just became SO excited because they just started back up again! I have been counting down the days until we could go back to Saturday market! Mostly I put in at spinach Greens, Eggs, Broccoli, Cauliflower, Avocado, tomato, Cucumbers, and Strawberries, and sometimes black beans for protein. Mm. Talk about a delicious filling salad. I can't talk this one up enough ladies and gentleman. Oh and to top it all off, Trader Joes Balsamic Vinagrette. MMM. Slap me silly.
I also have been loving asparagus..drizzle with olive oil, top with salt and pepper and parmesan cheese, and bake in the oven at 400 for 10 minutes. YUM!
I have been on this super health food kick. I have been wanting to be a vegetarian for awhile now, and still slowly inching my way that way. It would be hard to give up Red Robin...not sure if I could do it, due to that dirty bird..but I am definitely trying and moving in that direction. I have been trying new recipes to try and see if it would really be possible, and I really think that I could do it. I made a spaghetti the other night with meatless meatballs, (for Protein), with tacos, I just load them with veggies, and of course , the same goes for salads. I just think it is a healthier lifestyle anyway, and you are more conscious about what you are putting in your body. I also watched the documentary Food, Inc, as of late, and just to see the way things and the food industry are handled is disgusting. I really don't want to be part of any of that. I would rather just be self-sustaining grow all my own veggies, or get from local organic farmers, eat cage free eggs, only grain fed beef ( If I decide not to go veggie). This seems to be the healthier option, and I don't want all of those fillers in my foods. I feel like something has to be said for the average lifespan of the American dropping...while other countries are increasing. How can this be? Nasty ass food, that is how! How is it okay to put ammonia based fillers in meats, and eat eggs where the chickens are just caked in their own feces, and living amongst dead birds, or in dark tunnel houses, where they never see the light of day. So sad.

- 1/4 cup lemon juice
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 1 pound halibut or tilapia fillets
- SAUCE:
- 2 medium ripe avocados, divided
- 1/4 cup fat-free sour cream
- 1/4 cup reduced-fat mayonnaise
- 1 tablespoon lime juice
- 1 garlic clove, minced
- 1 teaspoon dill weed
- 1/4 teaspoon ground cumin
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried parsley flakes
- Dash cayenne pepper
- SALSA:
- 1 medium tomato, seeded and chopped
- 1 small red onion, chopped
- 4-1/2 teaspoons chopped seeded jalapeno pepper
- 1 tablespoon minced fresh cilantro
- 1-1/2 teaspoons lime juice
- 1 garlic clove, minced
- 1/8 teaspoon salt
- TACOS:
- 8 flour tortillas (6 inches)
- 2 cups shredded cabbage
